No Sugar Applesauce Muffins
Preheat oven to 375
Beat together in bowl:
1 large egg 1 3/4 c. applesauce (unsweetened, nothing but apples)
2T Canola oil
Add:
1 c. whole wheat flour 2/3 c. oat flour
1/3 c. dry oatmeal (instant or reg.)
3/4 tsp. baking soda 2 tsp. baking powder (Featherweight no-corn)
1/2 tsp. nutmeg 3/4 tsp. cinnamon
(may also add 1/2-3/4 c. finely chopped apples, fresh blueberries, or Enjoy Life Foods no-corn choc.
chips -- our favorite)
Mix well. Spoon batter into greased muffin tins. Bake at 375 for 18 min. Can be stored at room temp. for
a day or two (depending on your room temp.) but any longer needs to be refrigerated.
No-Corn Chocolate Chip Cookies
2 1/4 C unbleached flour
1 tsp baking soda
1 tsp sea salt
1 cup softened butter
1/2 cup pure granulated sugar
1/2 cup pure brown sugar
1 tsp corn-free vanilla (optional)
1/2 tsp water
2 eggs
1-2 cups Enjoy Life Foods corn-free chocolate chips
Preheat oven to 375 degrees.
Sift together flour, baking soda, and salt; set aside. Combine butter, sugar, brown sugar, vanilla, and
water; beat until creamy. Beat in eggs. Add flour mixture; mix well. Stir in chocolate ships. Drop by
well-rounded teaspoonful onto greased cookie sheet. Bake for 9-11 minutes.
